This isn’t your typical bakery. It’s the heart of their operation, where every cookie and dessert is carefully crafted before being shipped out to their locations and loyal customers across the metro area.

The vibe inside the Lab is all hustle and creativity. You’ll find mixers going, trays stacked high, and a small team locked in on details. We even caught the cheesecake brownies being made fresh right in front of us, and trust us—it’s as good as it sounds.

After soaking in the behind-the-scenes action, we headed over to Sugar Shane’s spot at Ponce City Market. This is where the full experience hits. Nestled in a beautiful, vibrant space that blends modern design with traditional Middle Eastern elements, we knew we were in for something special.

A Symphony of Flavor from Start to Finish

Appetizer: Caviar Labneh
We began our evening with the Caviar Labneh, a dish that set the tone for the entire experience. Silky and rich, the labneh offered a creamy tang that was elevated by the briny pop of the caviar. The contrast in textures—the smoothness of the yogurt cheese against the burst of roe—was masterfully balanced. Accompanied by fresh, warm bread, it was a luxurious yet refreshing start that left us eager for more.

Mocktails with a Twist

Delbar Spritz
Refreshing, citrusy, and just the right amount of bubbly—the Delbar Spritz was a beautiful prelude to our meal. Infused with aromatic herbs and light effervescence, it’s the kind of drink that makes you pause after each sip, just to appreciate the layers of flavor.

Saudi Money
This one was bold, unexpected, and unforgettable. With notes of cardamom, citrus, and a hint of something smoky, Saudi Money was more than just a drink—it was an experience. It's rare to find a mocktail with this much depth and character, and we could easily imagine returning just for this beverage alone.

Lamb and Labneh Sandwich
Savory, tender lamb was wrapped in warm bread and paired with tangy labneh, creating a sandwich that was both hearty and refreshing. Shishlik
Delbar’s shishlik brought skewered perfection to our table. The meat was smoky and succulent, marinated to perfection, and grilled to bring out the deep, earthy flavors. Served with a side that enhanced the dish without stealing attention, it was everything you'd want in a traditional Middle Eastern kebab—and more.

Mahi Doodi
A beautiful surprise of the night, the Mahi Doodi was delicately cooked fish that carried both freshness and depth. The crust was perfectly golden while the inside remained flaky and moist. Accented by subtle spices and paired with a thoughtful accompaniment, it was a celebration of seafood that even non-fish lovers would enjoy.

Dessert: A Sweet Ending

To close the evening, we were served a delightful soft serve topped with “patisa,” a flaky South Asian sweet, along with roasted pistachios and a tangy cherry sauce. The combination was genius—the creamy, cool ice cream playing off the crunch of the nuts and the delicate sweetness of the patisa. The cherry sauce added just enough acidity to tie it all together. It wasn’t just dessert—it was the grand finale.
